May be to much to ask but knob automation would be insane. So a record of knob movement which starts when you first move the knob then stop knob movement with quantization to the clock restarting the automation. Then with a simple VC module you can have automation for all external modules by using the outputs to your external modules cv inputs. This would create preset automations for external gear as well as MM plugins, if you could save the automation.
As a shortcut there may already be an automation VCV rack that does this. If so please chime in and maybe we can convince the developer to port it over. However I think having this function built in may be easier to use.
